Too Busy for Pictures & A Recipe

We had such a nice weekend!! It was filled with lots of fun, friends, and family. I was bad on the whole picture taking thing though! :( On Friday we celebrated Grady Campbell's 30th birthday...Adam and I got the night out alone! Saturday brought lunch with our favorites...Mary, Holly, & SK. We also went on a cupcake hunt. Our favorite bakery had already closed for the day so we tried my 2nd favorite, they were closed as well! Poor Camp had his heart set on a cupcake so we stopped off at a third bakery and he picked out a dinosaur cookie and cupcake. We spent Saturday night up in Thomasville to celebrate Nina's (Fred's mom) 91st birthday!!
My mom thought it would be a good idea to take her Christmas card picture since we'd all be together...Camp had another idea. :)

On Sunday, Adam smoked two boston butts. Yum, yum, yummy...that man can GRILL!! He makes the BEST boston butts I've EVER had! We invited my mom, Fred, & Chandler over for BBQ, potato casserole, asian slaw, garlic bread, and magic cookie bars! It was their last weekend in town...they're moving to north Georgia this weekend! :(
We finally move closer to them and then they get up and leave us!

Whenever I make mexican for dinner...whether it be fajitas, soft tacos, quesadillas, I usually have pico de gallo along with them. I used to buy the pre diced tomatoes, onions, and peppers, but recently created my own recipe and I make it myself! Adam raves about it and I honestly have no idea how it tastes because I don't like raw onions or tomatoes! I always get compliments every time I make it so I figured I'd post the recipe.
Lane's Pico de Gallo
(serves 4)

1/2  sweet onion, diced
1 tomato, diced
1/4 cup fresh cilantro, chopped
3 Tablespoons Extra Virgin Olive Oil
1/2 teaspoon garlic salt

Mix all ingredients...
Store in plastic container and refrigerate for at least 4 hours before serving.

Serve with tortilla chips, on tacos, fajitas...anything!

Think I see Camp's tonsils! Adam's Boston butt... I only THOUGHT my husband made the best Boston butt! Yum, yum and more yum. Need to post the potato recipe!

I see camp has taken over where his Dad left off!! I used to have the hardest time getting his pic!!!
